To create a crosstab, drag one element to the heading of another. The element you drag will define the columns (or "banner"), and the other will define the rows (or "stub"). To uncross it, drag the banner variable out.

For instance, below are two elements, IMPORTANCE ("I consider it important to eat breakfast every day") and BREAKFAST ("Did you eat breakfast today?").

Here it's set up so that IMPORTANCE appears as a crosstab versus BREAKFAST.

Shading highlights significant differences from the overall marginal. The stats tests intelligently account for the fact that each column comprises part of the overall marginal.

To clear the crosstab, drag BREAKFAST outside of the crosstab, and IMPORTANCE returns to a simple marginal distribution. To re-create the crosstab, drag and drop the header BREAKFAST onto IMPORTANCE.
